Carmalized Sweet Potatoes
Thanks again to everyone that has commented on my blog articles or have sent me email. I also want to thank the readers that take the time to visit my blog. You guys and gals make it all worthwhile. I have now been unemployed for two solid months and depression was beginning to set in. I have sent applications and resumes all over town, and in some cases, out of town for consideration in working at home. I've finally decided to become a full time student and pursue an Associates Science degree in Computer Information Technology with a core focus on database administration and development. I hope to start on February the 8th.
Today's guest is a sweet potato that has absolutely little to no prep time involved. This is a great side dish served straight from the grill. To prepare, simply wash sweet potatoes and skin them. Lay them out on a cutting board and lightly brush with olive oil and sprinkle lightly with ocean salt.
The grill should be medium - hot. The sweet potato has natural sugars that will caramelize and add a deep rich flavor to the grilled potatoes. Just make sure you keep a close eye on these so the sugar doesn't burn. It takes about 7-9 minutes per side. If you wish, you may brush with melted butter and lightly sprinkle with cinnamon or nutmeg when these come off of the grill. I prefer pepper, for a sweet and hot flavor.
