Now hold on a second before you label me. The fatty I'm talking about smoking is food. A 16 oz tube of ground sausage stuffed with a filling of choice. I have broken out my two cast iron skillets and fried up some diced potatoes, onions, garlic and green pepper. After it cooled off, I added salsa and shredded cheddar cheese. This is my version of the Southwest Fatty. I'll be doing the remaining steps today and I'll share that with you along the way by adding to today's blog post.
Don't forget that this weekend we will be making barbecued baked beans from scratch. I'll be using canned tomatoes only because they were on sale for more then 50% off this week. Otherwise we would be dicing our own tomatoes. Most recipes call for opening cans of store bought beans and that is fine for quick beans. But for those of us that like to cook from scratch, only dry beans will do. While they take much longer to cook, it is a lot cheaper then canned beans.
So do come join us rain or shine. This unfortunately will be an inside cook as I don't want to go through 6 hours worth of charcoal to make these. I'll see you in a little bit!
